Favorite Pumpkin Pie Recipes
Thanksgiving preparations are well under way. If you are hosting your family’s feast you have probably spent time researching any needed recipes last week. But, to my horror, I heard a radio talk show today saying everyone should attempt a new recipe this year. Now, I am not the most organized hostess in the world but I found myself thinking… “Are you kidding me?” This is already thanksgiving week, no time to test out the recipe. How would you find one you could trust? One that would be sure to please?
Then I decided to even consider this suggestion, I must be under the influence of my ‘up past midnight baking spree’ last night trying to get almost a dozen pies ready to be delivered to classrooms, workplaces and friends. That prompted me to share this trusted recipe with you. My mom has used this recipe every year for the most delicious, soothing pumpkin pie ever. I don’t eat pumpkin pie, with the exception of my mom’s… I love hers! It is truly a welcome sign of the holidays in our family and it seems to be almost all of the grandkids’ favorite as well.
My mom even has to make several small pies without crust for some of her grandsons. I thought that was just silly, until she informed me that my son was one of the ones requesting it. I was surprised to hear that, but thankful. Every time my mother does those “individualized special requests,” it’s just another way my kids feel her love. 🙂
My youngest sister’s boyfriend also noticed the special requests for the pie with no crust last year. With his wonderful sense of humor he announced that without the crust they were no longer pumpkin “pies”. He loves apple pie, she made him one last year and he was the only one who wanted it, the rest of us must have been eating the pumpkin ones. Again, in his good humor, he declared he wanted an apple pie with no crust too. In my mom’s good humor, that is exactly what he will be getting this year. I am interested to see how that goes over… should be funny.

Favorite Pumpkin Pies Recipe
Ingredients:
- One large can pumpkin (29oz)
- 1 1/2 cup sugar
- 6 1/2 tsp pumpkin pie spice
- 1 tsp salt
- 6 eggs
- 2 1/2 cup milk
- 1 can evaporated milk (12oz)
- Refrigerated ready made pie crust (optional for grandsons)
Mix pumpkin and sugar together in mixer. Add eggs, salt and spice. Finally mix in eggs and milks. Roll out pie crust and sprinkle some flour in bottom of pie pan then place crust in pan and pour in pie mixture. Makes 2 9 or 10 inch pies. Bake at 350 for 1 hour.
Cool, refrigerate then cover with whipped cream and enjoy!
